Winter veggie bowl

A delicious and nutritious salad for lunch or supper and perfect for a lunchbox! Packed with antioxidants, vitamins and minerals leaving you full of energy and your skin glowing!

Serves 2

Ingredients:

  • 100g sweet potato
  • 1 red onion, quartered
  • ½ cauliflower
  • 50g cherry tomatoes
  • 1 yellow pepper
  • 50g Tenderstem broccoli
  • 50g Brussel sprouts
  • 50g feta cheese
  • 100g black beans, cooked
  • Juice of ½ lemon
  • 2-3 tbsp extra olive oil
  • Sea salt and pepper

Method:

  • Preheat the oven to 200ºC/400ºF/gas 6.
  • Prep all the vegetables – wash and chop and place on a baking tray. Drizzle with a little olive oil, salt and pepper finely. Roast for 20-25 minutes or until cooked and golden brown.
  • Put on a saucepan of boiling water and steam/blanche the broccoli.
  • Build your veggie bowl, by assembling all the ingredients in 2 bowls. Drizzle with lemon juice, and olive oil and serve.
