Tuna/salmon spaghetti bolognese
This makes a delicious supper dish. I use Tuna or Salmon in this recipe as it is a lean meat which is high in protein and very low in fat which is great for weight loss.
Serves 2-3
Ingredients:
- 225g Tuna/ salmon
- 1 onion, finely chopped
- 4 garlic cloves, crushed
- 1 large carrot, grated
- 1x 400g tin of tomatoes
- 500ml stock
- 2 tbsp coconut oil
- 1 red chilli, deseeded and finely chopped
- Sea salt and pepper
- 300g courgetti spaghetti
Method:
- Heat the coconut oil in a large casserole dish, add the onion and garlic and gently cook for 2-3 minutes.
- Add the salmon/ tuna and chilli, turn up the heat and fry for a further 2-3 minutes until lightly browned.
- Add the tomatoes, carrot and stock, bring to the boil then simmer for 30-35 minutes. Taste and adjust the seasoning if necessary.
- Serve in bowls with courgetti spaghetti (it tastes great raw). Enjoy!
